In America, this is commonly called “London Broil,” even though it is unknown in England. This is an international cut, called sobrebarriga in Colombia, and favored in many Asian dishes. Try a quick marinade of garlic, olive oil, herbs, lemon juice, and red wine vinegar to bring out the juiciness of the Randall Lineback, and to ensure tenderness (See RECIPES). Before cooking, trim off any silver-skin and boldly hammer for tenderness. This thin steak cooks very quickly, so stay alert!  Cook to medium rare, let rest for at least 5 minutes after cooking, and always carve it thinly across the grain to serve to ensure tenderness. The bright color of the Randall Lineback Flank Steak is proof positive that the Randall Linebacks spend their entire lives outdoors, pasture born and pasture raised.

Note: Flank Steak and Skirt Steak can be used interchangeably in many preparations. Both are absolutely delicious! Joe tenderizes both, some home chefs don't hammer the Skirt Steak. Please see RECIPES

Pro Tip: Randall Lineback should be thawed in its vacuum-sealed package on a plate in your refrigerator (this will take 24-48 hours, depending on the thickness of the product). Never thaw Randall Lineback in hot water or at room temperature. We recommend against thawing in a microwave. If you must use a microwave for thawing, always remove the product from its vacuum package.
