Often called a “super food,” liver has been a staple of European kitchens for thousands of years. Liver from Chapel Hill tastes especially clean and rich due to the milk and pasture diet of the Randall Linebacks. High in iron and vitamins, liver can be cooked very simply in a sauté pan with butter, salt, and pepper. It is often accompanied by sautéed onions and can be served with salty, smoky bacon on the side. You can serve it alone or dress it up with a red wine sauce from the glaze of the skillet. Liver cooks very quickly and continues cooking after you take it off the stove. Tip: if you're going for paté (a favorite of ours), cook the liver in some bacon fat and add a couple of teaspoons of allspice. No matter how you prepare it, you'll be amazed. Liver does a body good!

To thaw Randall Lineback in its vacuum-sealed package place it on a plate in your refrigerator (this will take 24-48 hours). We do not recommend thawing Randall Lineback in hot water, at room temperature, or in a microwave.
