Known as scallopini, schnitzel, paillard, or cutlets, these thin slices of Randall Lineback are hand cut across the grain, providing 3-4 slices per package. The combined weight of the packages is 1 lb. This is one of the most flavorful cuts of Randall Lineback -- generally speaking, the harder a muscle works, the deeper and richer the flavor becomes. This means that you must tenderize this cut before using. Boldly hammer each side of the Scallopini with the textured side of a meat mallet (click here for one of our favorite mallets). It makes the cut tender and adds a little fun to prep time! For the most delectable results, dredge them in flour or breadcrumbs. This keeps them moist, so they reveal their best flavor. For an even more intense flavor boost, you can even roll them up with thin slices of prosciutto ham, fresh sage, and/or garlic. You won’t be disappointed, no matter what recipe you choose, providing you tenderize this cut.

Pro Tip: Product should arrive cool to the touch.  Place in your refrigerator to consume within three days, otherwise place it in your freezer. To thaw Randall Lineback in its vacuum-sealed package place it on a plate in your refrigerator (this will take 24-48 hours). Never thaw Randall Lineback in hot water or at room temperature. If you must use a microwave for thawing, always remove the product from its vacuum package.
