*We are pleased to be able to offer a limited supply of Chef’s Cut Skirt Steaks to our retail customers! These cuts arrive just as they would to a professional chef (see first two photos), so they require some trimming before cooking (see third photo for a rough trimming job).*

A chef favorite, this cut comes from the muscles of the diaphragm. As a hard working muscle, Skirt Steaks develop unparalleled rich, deep flavor. To prevent toughness, always bring to room temperature before cooking, tenderize with a mallet if desired, cook to medium rare, and always cut thinly, at an angle across the grain to serve. We like to cook our Skirts quickly over high heat and serve them with Chimichurri sauce. The cut can also be marinated and used in stir-fries or fajitas. This thin steak cooks very quickly, so stay alert! We prefer it medium rare and recommend letting it rest at least 5 minutes after cooking. We then slice very thin pieces across the grain to serve.

Pro Tip: Product should arrive cool to the touch.  Place in your refrigerator to consume within three days, otherwise place it in your freezer. To thaw Randall Lineback in its vacuum-sealed package place it on a plate in your refrigerator (this will take 24-48 hours). Never thaw Randall Lineback in hot water or at room temperature. If you must use a microwave for thawing, always remove the product from its vacuum package.
